French Bread Pizza

Ready in no time this crunchy french stick makes for an easy base to smother over your lotsa goodness sauce. Top with cheese and your favourite toppings for a simple pizza ready in minutes.

Ingredients
  

  • 1 stick French Bread
  • 1 jar Lotsa Goodness 6 veggie pizza sauce
  • 1 cup grated cheese (you can use cheddar or mozzarella)
  • 2 tsp rapeseed oil
  • desired toppings

Instructions
 

  • Cut the french stick in half evenly through the length, to create two long portions. Now cut each portion of those portions in half again (creating four pieces total) and place them on to a baking sheet.
  • Brush both sides with olive oil. Turn upright and bake in preheated oven 4 minutes.
  • Spread the veggie pizza sauce over each piece and sprinkle evenly with cheese.
  • Finish with desired toppings.
  • Bake in preheated oven until cheese is fully melted, about 10- 15 minutes. Keep a close eye on it to ensure that the edges dont burn.
  • Serve warm.

Lotsa Goodness Lasagne

When my daughter Charlotte was little we used to call her 'Lottie'. Lasagne was always her favourite home cooked meal, and still is.
Home cooked Lasagne is a family favourite in our house and with the lotsa goodness sauce you can create your own veggie packed version that your whole family will love.

Ingredients
  

  • 500g Meat free mince/ lean beef mince
  • 6 lasagne sheets
  • 1 Jar Lotsa Goodness 7 veggie Pasta Sauce

For the white sauce

  • 50g butter
  • 50g plain flour
  • 500ml semi-skimmed milk

Instructions
 

  • Pre-heat the oven to 200°C / fan oven 180°C

To make the RAGU

  • Heat a large frying pan and add the mince. Cook over a high heat and stir well until browned and cooked through. 
  • Pour in your jar of Lotsa Goodness 7 Veggie Pasta Sauce, stir through and simmer for 5 minutes. Then take off the heat.

To make the WHITE SAUCE

  • Melt the butter in a small saucepan over a low heat and add the flour. Whisk until combined and cook on low for 1-2 mins. 
  • Remove from the heat and gradually whisk in the milk until you have a loose sauce. Season.
  • Return to a gentle heat and whisk constantly until the sauce thickens.

LAYER UP!

  • Time to layer up the lasagne in a baking dish, starting with a third each of the ragu, then the pasta, then the white sauce. 
  • Repeat the layers, then sprinkle the grated cheese evenly over the surface.
  • Bake for around 30 minutes, until cooked and golden brown. Allow to stand for a few minutes, then serve.

Sophia's Super Healthy Spag Bol

My daughter Sophia's favourite meal. When she comes through the door from school and spag bol is on the stove she says " I can smell Lotsa Goodness".
By using the Lotsa Goodness 7 Veggie Pasta Sauce as your Ragu base you are already including 7 different types of hidden fruit and vegetables within the sauce. Should you choose to add even more such as some sliced mushrooms or peppers then you will be ramping the goodness up even further!
Serve with wholewheat spaghetti for a fibre boost and you have served up a SUPER HEALTHY spaghetti bolognese. Win for the family!

Ingredients

  • 2 tsp marmite or beef stock
  • 1 pinch Black pepper

Instructions
 

  • Heat a large saucepan over a medium heat. Add your mince and a pinch of pepper.
  • Stir until the mince is brown all over and cooked through.
  • Pour over your jar of Lotsa Goodness 7 veggie Pasta Sauce and stir through the mince until piping hot.
  • Top with grated cheese and serve with wholemeal spaghetti

Notes

If you have time, try adding even more goodness by adding extra veggies to your bolognese.
