Chicken Enchiladas with 8 veggie sauce

Ingredients
  

  • 1 large onion sliced
  • 1 red pepper deseeded and sliced
  • 3 tbsp olive oil
  • 4 skinless boneless chicken breasts/ plant based chicken pieces, cut into thin strips
  • 5 tbsp sweetcorn
  • 1 tin baked beans
  • 8 flour tortillas
  • 100 g grated cheese
  • 3 spring onions trimmed and sliced
  • 2 tbsp finely chopped coriander
  • 1 large avocado peeled and sliced
  • 150 ml soured cream

Instructions
 

  • Preheat the oven to 190C/170C/Gas 5.
  • For the enchilada, heat half of the olive oil in a large frying pan, add the sliced onions and peppers and cook over a medium heat for about 3 minutes, or until just tender and starting to caramelise at the edges. Add the garlic and red chilli and cook for a further 30 seconds. Remove from the pan and set aside.
  • Heat the remaining oil in the frying pan, add the chicken and cook quickly over a medium heat until cooked through and golden brown.
  • Add half of the enchilada sauce, baked beans and sweetcorn, cook for a further minute.
  • Lay the flour tortillas on the work surface and divide the chicken mixture between them. Roll the flour tortillas around the filling into cigars and arrange neatly and snuggly in an ovenproof dish (roughly 20 x 30cm/8x 12in). Spoon the remaining enchilada sauce over the top and scatter with grated cheese.
  • Bake for about 20 minutes, or until the filling is piping hot and the cheese bubbling, melted and golden-brown.
  • To serve, scatter with the spring onions and chopped coriander and serve with sliced avocado and soured cream alongside.

Kid Friendly Veggie Packed Fajita's

Quick, easy and suitable for vegetarians, these Kiddie Friendly Veggie Fajitas are perfect for working towards that all important 5 a day!
Im a big fan of all kinds of Mexican and Tex-Mex foods and spent a lot of time convincing my kiddies to enjoy it as much as me! With our mild 8 Veggie Mexican sauce this helps create a subtle blend of spice whilst including hidden blend of extra veggies and haricot beans.

Ingredients
  

  • 6 Flour Tortilla Wraps
  • 1 jar 8 Veggie Mexican Sauce
  • 150 g Baby sweetcorn
  • 1 Small onion
  • 1 Red or yellow pepper
  • 1 handful Mushrooms
  • 1 can 400g Black beans (rinse and drained) (optional)
  • 1 handful Tofu or Shredded Chicken, cooked
  • Your choice of grated cheese/ guacamole / sour cream / salsa / lime/ shredded lettuce/ coriander
  • 1 tbsp Olive or rapeseed oil

Instructions
 

  • Remove the tortilla wraps from the packet and wrap in foil.
  • Preheat the oven to 180oc
  • Slice up your veggies- mushrooms, sweetcorn, peppers, onion and mushrooms
  • Put 1 tbsp of olive in a large frying pan or wok and heat over a high heat for 1 minute. Add all the sliced vegetables and stir-fry over a high heat for 5 minutes, or until the veg is softened.
  • Tip the black beans into the same pan and stir until warmed through.
  • Add in your cooked Tofu or Shredded cooked chicken
  • Gradually drizzle in your Lotsa Goodness 8 Veggie Mexican sauce. Use as much or as little here as you wish. It depends on whether you prefer your fajitas to be very saucy or a little more on the dry side.
  • Put the tortilla wraps in the oven for 10 minutes until warmed through.
  • Remove from the oven and keep the tortillas wrapped in foil until needed.
  • Lay a large spoonful of the chopped vegetables and serve in the warm tortilla wraps alongside your chosen toppings. Let the kiddies layer on whatever they want to make up their own fajitas - sour cream, grated carrot, shredded lettuce, salsa or grated cheese.

Mini Muffin Pizza's

These 'me' size pizzas are perfect to make with the whole family. They can also make a great appetiser for parties, picnics or lunchboxes.

Ingredients
  

  • 8 English muffins
  • 1 Jar Lotsa Goodness 6 veggie pizza sauce
  • 200g grated cheese or mozzarella

Toppings of your choice (Here are some suggestions)

  • Cherry tomatoes
  • Mushrooms
  • Sweetcorn
  • Olives
  • Sliced peppers

Instructions
 

  • Preheat your Oven to 180oc
  • Slice your english muffins in half.
  • Spread 1tbsp of lotsa goodness pizza sauce on each half and spread to the edges.
  • Top each half with grated cheese of your choice.
  • Top with your chosen toppings , have fun and get creative with your design.
  • Bake in the oven for 8-10 mins until the cheese has browned a little and the toppings look cooked.

Ingredients
  

  • 250g meat free mince/ lean mince
  • 1 tin baked beans
  • 1 jar Lotsa Goodness 8 veggie mexican sauce

Instructions
 

  • Cook you mince until browned
  • Add your jar of Lotsa Goodness 8 veggie mexican sauce
  • Add the tin of baked beans.
  • Stir through until piping hot.
  • Serve with rice and enjoy

Notes

The jar of Lotsa Goodness 8 veggie mexican sauce already super boosts this meal by adding haricot beans, oven roasted vine ripened tomatoes, peppers, mushrooms, carrot, courgette, onion and garlic. If you get time why not add some extras such as kidney beans or diced peppers. 
 
Serve with a grated cheese, a dollop of sour cream and some fresh coriander.

Ingredients
  

  • 1 jar 7 veggie pasta sauce
  • 350g Pasta
  • 1 tbsp Mayonnaise

Instructions
 

  • Cook and drain your pasta
  • Add your jar of Lotsa Goodness 7 veggie Pasta Sauce and stir through the until piping hot.
  • Add your tbsp mayonnaise and stir through the pasta.
  • Top with grated cheese and extra chopped veggies.

Notes

It is so easy to add even more goodness to this creamy pasta dish. Try topping with sliced cherry tomatoes, cooked broccoli, sweetcorn or peas. This will also help to bulk your meal up even further to not only increase the amount, but also the amount of nutrients to your meal. 
Serve alongside salad.
